​Fried Rice and General TSo’s Chicken

General TSo’s chicken:

TSo’s Recipes:

Chicken breast 2-3pound 

Soy sauce ½ cup, ½ cup of water, 2tablespoon of sesame oil

1-3 teaspoon of hot sauce, Chili sauce, ½ teaspoon of salt

5 cloves of garlic {minced}, 3 tablespoon of grinded ginger

Pinch of pepper, 2 tablespoon of corn flour, 1 ½ of tomato paste.

Flour breading recipes:

1 cup of flour

2tablespoon of grinded ginger, 1 tablespoon of salt and onion powder.

½ black pepper, ¼ teaspoon of cayenne pepper.

Egg wash: eggs and 2tablespoon of water

Caramel sauce: ¼ cup of water and 1 cup of sugar

Vegetable: snow peas carrot, spring onion or vegetable of choice, dry chili pepper 

Garnish: sesame seeds and spring onion {diced}

Preparation:

Wash the chicken breast in a bowl suitable for marinating 

Add soy sauce, sesame oil, hot sauce, minced garlic, grinded ginger, pepper and spice {all as measured}

Mix all the added spice and ingredient with the chicken, cover with a foil paper.

Keep in a cool place to marinate for 30minutes.

Mix the flour and the corn flour in a bowl

Add all spice, black pepper, ginger powder, garlic powder.

Rub the marinated chicken in it, rub it in the whisk egg again and cover it in the flour mix again.

Place it on a foil paper and put in the oven to cook for 20 minutes.

Caramel sauce:

Mix the sugar and the water together and heat on fire till it becomes brown

Add corn flour to make paste 

Add the TSo’s chicken from the oven, add the green pepper, carrot and spring and leave to steam.

Served with lettuce….

Fried rice preparation:

Recipe:

Basmati Rice 

2 eggs, salt, bay leaf, garlic and ginger {minced} and habanero pepper

Salt, onion, soy sauce, oyster sauce and sesame oil

Vegetable oil

Shrimps, carrot, long peas, red and green jalapeno pepper

Chicken breast, sausage

Sweet corn, green peas, spring onions

Preparation:

Wash the rice and parboil for 10 minutes

Mix the egg in a separate bowl with oyster sauce with pepper and a pinch of salt to taste

Mix the egg in with the rice in a pre-heated pot and stir to separate the grain.

Cut the chicken breast and sausage into cubes.

Marinate the chicken with shrimps in soy soy sauce, spice and sesame oil.

Add 2 tablespoon of oil in a pre-heated pot, when hot

Add shrimps, stir fry till its pink and drain out of oil, fry the cubed chicken and sausage.

Fry all the veggies {diced carrot, spring onion, onion, long peas, sweet corn, red and green jalapeno, red and green jalapeno} and put in a separate bowl.

Put on fire a clean pot and add 2tbsp of oil, when it is hot add the parboiled rice and egg mixture and Stir fry for 2minutes.

Add 1tbsp of oyster sauce and stir.

Add chicken, sausage and shrimps and keep stirring.

Add all the fried veggie and stir all together. 

Add spice, sesame oil and pinch of salt to taste. {Check the rice softness, if still hard, add a little water} 

Cover up to steam up for 15minutes.

Bring down from fire and stir up…

Serve Hot with the TSo’s chicken on lettuce and sprinkle the sesame seed garnish
